100% Chardonnay from the farm.
Apple pie and prune flavor with a bit of richness from the lees. A fine lime undertone and a long clean finish. Fine bubbles and classy.
Grapes are handpicked early in the morning to keep the freshness of the grapes.
The must is settled and the alcoholic fermentation starts with wild yeasts in a stainless steel tank for 1 week, before to be transferred into 450L Rousseau Piano oaks (French).
Then, the malolactic fermentation is done naturally during the 12 months ageing. Batonnage are done every 2 weeks.
A complex and fresh wooded Chardonnay in a Burgundian style made by Philippe Colin. The subtle oak aromas bring to this wine a luxurious mouth feel.
Bunches are hand picked and sorted manually . After three days of cold maceration, berries are fermented on skins with regular pumping-over. Wine is then aged in old French oaks for 8 months for maximum freshness and perfume.
Great intensity in this wine. Flavours of white pepper, cedar and wild scrub spicing.
Syrah grapes are handpicked early in the morning, at the good maturity. Then, after three days cold soak, the wine is fermented. Then matured in French oaks for 12 months to create a real complexity and freshness.
A very interesting wine. Beautiful and complex nose with dark fruits, clove and spice aromas. The taste is incredibly fresh for a red wine and the tannins are perfectly integrated in the wine.

Fermentation takes place in open stainless steel tanks and wild yeasts are used.
During fermentation, 2 pump overs a day are done. After 10 days, the wine is removed from the skins and transferred into 228-liter French oaks. (10% new)

« Innocence » is a nod to all the kids we hosted here at Topiary. Their looks are memorable, and Philippe, the owner and winemaker, made this blend with the same philosophy. The harmony between the Cab and the Syrah is very well done. The nose is smooth, with the fruity aromas of Syrah, and then when you drink it, the enjoyable taste of the Cab comes in to create a real innocent experience.
