The detailed care we apply on the vineyard continues into the cellar with the same philosophy: guide gently, intervene minimally and allow the fruit to express the character of its origin.
Every single plot, defined by its cultivar and age, is fermented into its own specific vat.
Our harvest is entirely manual. Pickers carefully select only ripe, healthy grapes, leaving anything imperfect on the vine. Once in the cellar, an additional sorting is made.
This approach guarantees exceptional quality from the very first step of the winemaking process.

FRENCH WINEMAKING
With pride, we aim to share our knowledge of traditional French winemaking. Our wines reflect the unique potential of our terroir, which we strive to enhance throughout the winemaking process. For our red wines, we practice destemming and cold maceration to gently extract flavour and colour, ensuring elegance and balance in every vintage.
NATIVE YEASTS FERMENTATION
We refrain from using commercial yeasts for both alcoholic and malolactic fermentation. Instead, we rely on the native yeasts present in the vineyard and cellar, allowing them to guide the process and produce wines with distinctive character and a true expression of our terroir.
FRENCH OAK AGEING
The wine will remain for 12 months in 500L french oak barrels, in the basement of the winery. This dark room is kept at a constant cool temperature. Whites ferment and mature on their lees with regular batonnage to gain richness and texture. Reds only undergo malolactic fermentation to bring them depth, structure and harmony.
